Don't let your fresh vegetables go to waste

Do you have the same problem that a lot of us do? You have all of your meals planned for the week and you buy fresh veggies during your weekly grocery store trip. Of course you have full intentions of cooking all those vegetables before they go bad, but we all know... life happens. Sometimes dinner plans change, sometimes vegetables ripen faster than you had planned and that means one thing... wasted food = wasted money.

Instead of letting your vegetables go bad, you can save them for when YOU are ready to cook them. Just before they have reached their maximum lifespan, cut them up and prepare them however you prefer, add your favorite seasonings, vacuum seal them and then toss the bag into your freezer. Vacuum sealing your fresh vegetables will keep them fresh for years, compared to normal storage bags which lets air in, and within a few days ice crystals and freezer burn sets in – robbing the taste and texture of your fresh veggies. 

When you are ready to enjoy perfectly steamed vegetables, puncture your bag (or cut off a small corner) and pop them in the microwave. In only a few minutes, your frozen vegetables will be ready to eat. If you prefer to cook them sous vide, thaw them and put them in the water bath at the appropriate cooking temperature and time. Either way you choose to cook them, you will have a perfect side for dinner and no food was wasted!
