How to Make Flank Steak Tacos & Pickled Onions Using the USVX Chamber Vacuum Sealer

Who doesn’t love to celebrate Taco Tuesday?! Or Taco Any Night of the Week, if we are being honest!

Tacos became popular since they were a simple, easy-to-make recipe with few ingredients. However, they have evolved with the use of elaborate flavors and toppings that elevated the simple dish into something more.

Just because more flavors and toppings are involved, does not mean that tacos are any more complicated to make. We are here to share our secrets on how to make the most delicious flank steak tacos with pickled onions using Avid Armor products.

Quick Pickled Red Onions

Ingredients:

1 large red onion, thinly sliced into rings

½ cup room temperature water

½ cup distilled white vinegar

¼ cup apple cider vinegar

2 tsp. fine sea salt

1 tsp. red pepper flakes

1 Tbsp. honey or agave nectar

Directions:

We decided to use the Ultra Series X Chamber Vacuum Sealer with a chamber pouch, but of course, the USV20 or USV32 will work as well.

  1. Slice the red onion into thin rings. Use either your favorite kitchen knife or a mandoline slicer.
  2. Place the onions into a chamber pouch. Any size chamber pouch will work with the USVX as long as it is smaller than 10”x13”.
  3. Add the water, distilled white vinegar, apple cider vinegar, salt, red pepper flakes, and honey (or agave nectar) to the chamber pouch.
  4. If any liquid is in the top few inches of the chamber pouch, take a paper towel to wipe the inside of the bag dry. Place the pouch into the chamber, making sure the pouch is placed correctly with the end of the pouch open.
  5. Close the lid and press the ‘Marinate’ button. Run this cycle back-to-back 3-5 times for best pickling results. Each cycle is approximately 90 seconds long. 

    Note: The more Marinate cycles you run, the faster the onions will turn to the desired consistency.

    If you want to make extra pickled onions, vacuum seal the pouch after the marinating cycles and place in the refrigerator. The onions will keep fresh for up to a month. If you choose to store them in Tupperware or a mason jar, they will keep fresh for approximately 2-3 weeks.

Flank Steak

Ingredients:

Juice of 2-3 limes

½ cup avocado oil

6 large cloves of garlic, minced

2 tbsp. honey or agave nectar

2 tbsp. chili powder

2 tbsp. ground cumin

½ tsp. ground black pepper

2 tsp. salt

3 lbs. flank steak

Marinade Directions:

  1. In a large mixing bowl, add the lime juice, avocado oil, minced garlic, honey or agave nectar, chili powder, cumin, pepper, and salt. Stir until combined.
  2. Place the flank steak into a chamber pouch.
  3. Pour the marinade over the flank steak.
  4. If any liquid is in the top few inches of the chamber pouch, take a paper towel to wipe the inside of the bag dry. Place the chamber pouch into the chamber, making sure the pouch is placed correctly with the end of the pouch open.
  5. Close the lid and press the 'Marinate’ Button. Run this cycle back-to-back 4-5 times.

Cooking Directions:

Cook the flank steak with your preferred method. This can be done by stovetop, broiling or grilling.

Our preferred method of cooking is grilling.

  1. Preheat the grill to medium-high.
  2. Once up to temperature, place the flank steak on the grill.
  3. For medium rare, cook about 8-12 minutes, turning it over about halfway through the cook time. Adjust cooking time to your liking - time varying due to the thickness of the steak. Internal temperature should reach 130 degrees Fahrenheit.
  4. Remove the steak from the grill and immediately cover with aluminum foil.
  5. Let the steak rest for approximately 5 minutes. During this time, the temperature will continue to rise and will continue cooking. The temperature will reach about 135 degrees Fahrenheit.
  6. After the rest time is up, remove the steak from the aluminum foil and slice the steak across the grain into strips.

Flank Steak Tacos

Ingredients:

10 flour or corn tortillas, warmed

Flank steak

Pickled onions

Avocado

Queso Fresco

Cilantro, chopped

Any other toppings you love!

Directions:

  1. Turn on the stovetop to medium to medium-high heat.
  2. Place the tortillas, one at a time into the pan (no oil or cooking spray is needed).
  3. Warm up the tortillas for approximately 45 seconds until the bottom develops light brown spots.
  4. Remove from the pan.
  5. Assemble the flank steak tacos as desired and ENJOY!

Note: If you want to heat up a larger amount of tortillas at once, preheat the oven to 350 degrees Fahrenheit, wrap 5-7 tortillas in aluminum foil, and place on the oven rack for approximately 15 minutes or until the tortillas are warmed up all the way through.
